Chili Lime Avocado Chicken Salad

Per serving: 464 calories | 5g saturated fat | 13g carbohydrate | 7g fiber | 33g protein 

Makes 2 servings; 10 ingredients; 20 minutes to prepare


  • 6 cups arugula
  • 1/2 cup avocado (diced)
  • 1 cup cherry tomatoes
  • 8 ozs chicken breast (roasted, rotisserie style (skin removed))
  • 1/4 cup slivered almonds
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 2 tbsps extra virgin olive oil
  • 3 tbsps lime (freshly cut and squeezed for juice)
  • 1/4 tsp red hot chili pepper (chili pepper flakes)


  1. Mix the dressing in a small bowl: vinegar, water, olive oil, lime juice & chili pepper flakes. Set aside.
  2. Chop and arrange the vegetables in a larger bowl.
  3. Top with the dressing and slivered almonds. Serve immediately.
